How to do attack without an NPC?
For example, if there is a trap that fires some kind of weapon attack or spell attack, is there way to resolve an attack in the combat tracker without adding an NPC?

You will want to use an NPC for those types of attacks. Just create an NPC and add it so you can use an encounter to load it quickly when needed. This way will automatically load the table and allow you to set a modifier as the OB of the attack.
You could also manually drag the table to the table resolver from the RM Tables section and then just roll high open-ended and drag the result to the Roll field on the table resolver.

At 15mins in he creates a trap for use in the combat tracker. Although the system has been updated (Video is from 2020 and he's using FGC), the process is the same.
I have created a NPC folder for Traps, Poisons, Diseases etc and pull them in when necessary.
