The Pathfinder Second Edition ruleset is included with the license - which is the structure and logic of the system, but no data. To be clear, is the Essentials Bundle a "complete" collection that will not have new items added to it? I feel like that should be made clear on the listing if so. I purchased several items I would not have, if I had known the bundle was no longer active.

As mentioned in another thread, you should buy a bundle for what it contains now; not what may, or may not, be added in the future. I have asked SmiteWorks if they will consider "closing" this bundle and not adding any more products to it - but, as this is a legacy rules bundle, it would be based on there being no more legacy compatible rulebooks released by Paizo. That's a fair assumption, but who knows what might be released by Paizo in the future - if there's a future new legacy rulebook released it would make sense to add it to this bundle. So, if SmiteWorks agree, it could be tentatively considered complete - with the assumption this could change in the unlikely event that Paizo releases further legacy rulebooks.

So what is necessary to play PF2E in Fantasy Grounds. I already have my FG license and tons of books for 5e but my group wants to try out PF2e Do I need the DM Core, Player Core, and Monster Core? If I am homebrewing? Or can I get by with Player Core and Monster Core? or DM Core and Monster Core? Sorry I feel like it is not straightforward what those books give you and what are needed.

You can start with the free modules associated with the ORC'd remastered books (PC/GM Core/Monster Core; there does not yet appear to be an ORC module for the Player Core 2). They don't include non-ORC'd bits like Paizo's art or the various lore blobs, but the records do contain the proper automation. Buying the licenses for the Paizo content will get you all the content.
Monster Core will be useful if you want to homebrew adventures, but it'll be less important if you buy a premade adventure since those should include all the records for the associated monsters.
GM Core is less vital than the Player Core.
For what it's worth, you could also buy the conversion of the Beginner's Box -- it's meant to be self-contained, and includes pregenerated characters.

Thank you very much for responding to me and letting me know what I need to get started. I also picked up Tales of the Valiant but I am waiting on them to finish working on that so I can also try that out with my groups. But I look forward to giving PF2e some play time. I did get a discount from Paizo on buying the rule books for PF on Fantasy Grounds.
The bonds formed between adventurers are stronger than steel.
