Should player be able to change what stat influence their skills?
This sunday we did some D&D and we found out that the players could change their STAT that influence their SKILLS by clicking the STAT.
Should that not be locked for the players?

Assuming you're talking about 5E - Some class abilities change the ability score relevant to different skills or abilities. Players need access to that function in order to make those abilities work.
Just like at a real tabletop, there has to be some inherent trust that players aren't fudging numbers behind the scenes. At least in this case the DM can check the sheet without making a scene!
