For Fantasy Grounds Unity, what version of lua should we be using to build extensions

5.1 for Classic, I believe it's the same for Unity.

I searched the Portal for "Ruleset+-+Scripting" and got to the correct page (https://fantasygroundsunity.atlassia...et+-+Scripting)
Did they reorganize the website since August of 2020?

If you intent to build extensions you might wish to check out the Ruleset Wizard. Not my product but I do use it.
