Should encumbrance affect speed?
I have a PC with maximum encumbrance of 120, their current load is 121.
Should the speed be automatically reduced or do I have to change that manually?

You'll probably have to change it manually. But this will depend on what ruleset you're using - each ruleset has different mechanics and functionality. Please mention what ruleset you're using when posting questions in generic forums. What ruleset are you using?

I'm using 5e, sorry. Didn't want to manually change it until I was sure, in-case I messed up something that was meant to be automatic.

It isn't automatic. So if you hover over the little plus sign at the top right of the speed box you can use the mouse wheel whilst holding down the CTRL key to add a penalty to movement; rather than changing the base value.
