Have you verified that the user has not toggled the targeting option in the upper left of the modifier box below the chat window? That option specifies whether targeting is used when making rolls from sheets via double-click.

Wow - I hadn't spotted that toggle myself! We're playing again this afternoon, so I'll check that and revert.

Hi All

Just for completeness on this issue: we have now played a few times since the problem with seemingly random targeting and everything is working 100%! Our sorcerer is not doing anything differently (still targeting via the CT; still dragging the ATK and DMG rolls into the chatbox; etc) but it all works now. So, frustratingly, I don't know what's changed, but we're happy - it's all good now!

Anyway, thanks for the input and suggestions.
