Equipment and Setup
Looks like my old iphone earbud/microphone combo is approaching end of life and I know the built in mic on my laptop is far from optimal.
What are people leaning towards for a voice combo? Looking for advice on gear.
My only limitations are I can't get away with external speakers and I don't want to spend a thousand dollars, but not opposed to going for higher quality.
Gaming headset? Quality headphones and seperate microphone? Just get a new earbud/mic combo from apple?

Yeah, go with a gaming headset. If you want to wander around freely, look at a wireless one.

I've actually been looking at a headset recently. Haven't picked one yet, but I'm going wireless. Some of the candidates;
SteelSeries ACrtis 7
Logitech G955 (?)
Hyper X
(all from memory, can't find my notes...)

Highly recommend the SteelSeries headsets (all of them). I'm using an Arctis 7 right at this moment, but I also have an 800 series and an Arctis 5.

I bought one of these based of your recommendation last year.
I really like it - the quality is great, and I've had no issues. The two features I really like are the mute LED on the end of the microphone arm (let's you usually know when you are muted, or not) and the 2 batteries that allow you to keep full wireless operation over long periods of time.

The Arctis 7 is their current wireless one, and the only advantage the 800 has over the Arctis 7 is the swappable batteries. If you don't need a headset for more than 10-12 hours at a time ( ;-) ) the Arctis 7 is just as good (and has a couple features that the 800 doesn't have).
