Polymorph Effects
Are there mechanics that help with the use of Polymorph type spells? Or what about Greater Possession?
For example, if I am playing a sorcerer who shapechanges into a dragon, there are a lot of changes to manage. How does that work?

I would use one of the techniques for Druids wildshape. You can search the forums for some threads on it.
What I usually do is either share the NPC to the character, or, if they use the shape often, create a second PC that is the polymorphed/shapechanged form and then just swamp them out on the CT as needed.

See this video for details of how to give the player control of an NPC. Having said that can a character polymorph themselves anyway?

Well, in a sense, yes. Spells or abilities like wild shape, Shapechange, Beast Shape, etc...
