PFS Professions...

Always wanted to choose a profession for your character, but not sure what to choose? Here is a list of some professions for PFS.

Do I remember correctly reading somewhere that "Torturer" was nixed for PFS?

You're right - Mike B. specifically banned it as evil. However, I guess it's OK if you're an evil Season 7 Chelaxian NPC, now that I look at the alignment of the character where I saw it (LE). So, for a non-evil PC who isn't resorting to torture, I guess you could legally use something like Profession (inquisitor, interrogator, investigator, auditor, examiner, analyst, or maybe just jailer). Any of those are more neutral and not specifically prohibited.

Profession (sailor) was common in my search, along with soldier, merchant, miner, etc.

Barrister, of course, is a man who serves you coffee at Starbucks.

The professions listed under the skills section are:

architect, baker, barrister, brewer, butcher, clerk, cook, courtesan, driver, engineer, farmer, fisherman, gambler, gardener, herbalist, innkeeper, librarian, merchant, midwife, miller, miner, porter, sailor, scribe, shepherd, stable master, soldier, tanner, trapper, and woodcutter.

The ones in bold did not show up on my earlier list.

There are, of course, thousands of options - whatever you want that isn't evil. However, the ones shown above come from paizo sources.

Instead of "Torturer" you could just list "Avid gamer who likes to talk about all his characters" instead. They're basically the same thing.
